Neiman Marcus Cookies

These cookies are scrumptious! There is an urban legend surrounding this cookie. If you google the cookie, every story is the same. It says:

My daughter and I had just finished a salad at a Neiman-Marcus CafĂ© In Dallas and decided to have a small dessert. Because both of us are such cookie lovers, we decided to try the “Neiman-Marcus cookie.” It was so excellent that I asked if they would give me the recipe and the waitress said with a small frown, “I’m afraid not but, you can buy the recipe.” Well, I asked how much, and she responded, “Only two fifty, it’s a great deal!” I agreed with approval, just add it to my tab I told her. Thirty days later, I received my VISA statement and it was $285.00. I looked again and I remembered I had only spent $9.95 for two salads and about $20.00 for a scarf. As I glanced at the bottom of the statement, it said, “Cookie Recipe – $250.00″ That was outrageous! I called Neiman’s Accounting Dept. and told them the waitress said It was “two-fifty,” which clearly does not mean “two hundred and fifty dollars” by any POSSIBLE* interpretation of the phrase. Neiman-Marcus refused to budge. They would not refund my money, because according to them, What the waitress told you is not our problem. You have already seen the recipe. We absolutely will not refund you money at this point.” I explained to her the criminal statues which govern fraud in Texas. I threatened To refer them to the Better Business Bureau and the State Attorney General Office for engaging in fraud. I was basically told, “Do what you want, it doesn’t matter, we’re not refunding your money.” I waited, thinking of how I could get even, or even try and get any of my money back. I just said, “Okay, you folks got my $250, and now I’m going to have $250.00 Worth of fun.” I told her that I was going to see to it that every Cookie Lover in the United States with an e-mail account has a $250.00 cookie recipe from Neiman-Marcus…for free. She replied, “I wish You wouldn’t do this.” I said, “Well, you should have thought of that before you ripped me off,” and slammed down the phone on her. Then she gave the recipe out to all her friends.

I first tasted this cookie at our friends house and they quickly became Rich's favorite cookie. I decided to give it a whirl today.

I am excited to see if Rich likes them as much as the others! I halved the recipe, and it made 4 dozen. I have listed the recipe below.

1 cup butter, softened
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups uncooked regular oats
1 1/2 cups semisweet chocolate chips
4 ounces milk chocolate candy bar, coarsely chopped
1 cup chopped pecans


Measure oatmeal, and blend in a blender or food processor to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda. Stir in chocolate chips, milk chocolate bar, and pecans. I used few pecans and made 3 dozen without pecans for those who do not like nuts.

Roll into balls, and place two inches apart on a cookie sheet. *I always use parchment paper. Bake for 6-8 minutes or until lightly browned. Cool slightly on baking sheets. Then, remove to wire racks to cool completely.

Christmas in our new home

Looks like this today...
This recipe will be cooking tomorrow...

Beef Stew
(fortheloveofcooking.net)
1 lb stew meat
1 sweet yellow onion chopped into large pieces
6 cloves of garlic chopped
1 tbsp olive oil
1 can diced tomatoes
1-2 tsp dried thyme
Salt and pepper to taste
1 bay leaf
1 tsp garlic powder
6 cups of beef stock

In large cast iron (or baking pot) heat olive oil. Add stew meat and onion and cook for about 5 minutes. Add garlic and cook for 30 seconds before adding tomatoes, seasonings and stock. Cover and cook in the oven (on stove top or in crock-pot) for at least 4 hours. Remove pot from oven place on stove top over medium heat.

1 cup diced carrots
1/2 cup diced celery
1 cup diced baby red potatoes (skin on)

Add vegetables to the stew and add more beef broth if low. Taste and add seasonings if needed. Cover and cook for 1 1/2 - 2 hours.

Jesse Tree

Isaiah 11:1, "and the prophecy that the Savior would come from "the stump of Jesse; from his roots a Branch will bear fruit."

A friend from church had the wonderful idea of getting girls together and having a Jesse Tree Ornament Exchange. I had no idea what a Jesse Tree was, but I am so excited about it now that I know! We based our ornaments from here. We had a craft day at my house before the exchange and it was so much fun! There is something special about girls getting together to craft while listening to Christmas music, and laughing at ourselves while we craft what we all think look like "child made ornaments." These girls are so crafty it is crazy! There is some serious talent in my church! For pictures take a look at my friend Sara's blog.


BU Homecoming 2011

I know this post is way late, but Amanda sent me some wonderful pictures and I wanted to include them on this post. Rich and I had a busy week traveling to and from Waco several times the week of homecoming. I had a Gala for work and had to be back for work the next day here. So a day later we were back on our way to Waco. This year was different for us because it is the first year for homecoming that we have not lived in Waco. It was a blast though! We got to see my sister and their sweet baby Georgia, saw friends at the bonfire, went to the parade, and did all kinds of fun things!

Orphan Sunday

On Orphan Sunday, Christians stand for the orphan. We are a people called to defend the fatherless…to care for the child that has no family…to visit orphans in their distress.

Puppy Birthday Cake

Yes, I am that person. Making a cake for my dog's birthday. But here is the thing...I am not the only one! I will be making this recipe via Amanda for Tegan on Monday. She is going to be two! Pictures will come next week!

Peanut Butter Delight Dog Cake

1 cup white or whole wheat flour
1 tsp baking soda
1/4 cup peanut butter
1/4 cup vegetable oil
1 cup shredded carrots
1 tsp vanilla
1/3 cup honey
1 egg
1 tub non-fat plain yogurt

Directions:
Preheat oven to 350°F. Mix together flour and baking soda. Add remaining ingredients and mix well. Pour into a ring mold sprayed with a nonstick spray and bake for 40 minutes. Cool completely and frost with non-fat plain yogurt









It is hard to believe she was so tiny. Also cant believe that shirt I am wearing in the picture above no longer exist because Tegan decide to toss it around like a toy when she helped herself to the laundry. Love my girl!

Shay is Married!

Congrats to our new friends Shay and Adam on their marriage! We have so many mutual friends, and church connections it is awesome to see God plant new friendships in our lives. They had a beautiful ceremony at Valley Ranch and their reception was so much fun!

Shay did a wonderful job planning the day. She came over to our house the week before their wedding and it was so fun to see how excited she was. Then to see her on her wedding day it all come to life was precious. Sadly I did not get a picture with the bride, but she was beautiful!!

Rich did not have a dull moment at the reception. Our small group was conveniently seated right by the dance floor and Rich had a awesome dance off with Amanda's brother. Amanda was a bridesmaid and Joey was an usher so they stayed the weekend with us. Harley and Tegan enjoyed their time together and I enjoyed my Amanda time!

A Youth Ministers Wife

Because I use this blog as somewhat of a journal of our lives I thought I would answer a few questions for us to have and look back on. Often I am asked about being a ministers wife and how I feel about it... take it as you will. This is merely my short lived experience.

A little background...
Rich and I met in college and he was a youth associate at a church in Waco. I knew his plan was to go into long term youth ministry. This was something that I had to seriously consider. I needed to have some serious conversations with Jesus and figure out if this was something I could handle. I never saw myself marrying a minister. But I fell in love with one. A youth minister at that! After seeing Rich do his thing and hear him speak, lead worship, and watch his interactions with the students. How could I not fall more in love with him and know that he was obeying and trusting what Christ had for him.

One of the first times I went to Sondays Camp with Woodway I wrote Rich a note and said "You are truly in your element." I meant it. So now we have been married for a little over 2 years and he has graduated with his MDiv and we are in full time youth ministry!

How do you protect your marriage from the demands of ministry?
Rich is great at leading out in this. He is protective of our time and our marriage. When he is home, he his home. If something comes up that is urgent, or something needs his attention he is great about letting me know that something has come up and he needs to be at work a little bit longer or work from home. Depending on the situation I may or may not have the details. Which I also appreciate. I admire Rich's integrity to the students and their families. I do not need to know all the details. What people trust him with-they can trust him with.

Concerning our time together-we both are conscious of how important it is. We have weekly traditions. We grill out every Monday, we have ice cream dates, we spend time with Tegan of course. Rich has done an amazing job protecting our time. I know this is not everyones experience, but we have worked hard to protect our time.

Are you required to go to youth events?
Outside of being a member of our church, and a part of our Sunday school class, Woodway and Valley Ranch had no "requirements" for me. Again, I know this is not everyones experience, but I am so grateful for the churches and how protective they were/are of me. I am not required to go to any events, lead a small group, or stay up for the all night lock ins :). I do them because I want too!

One of the first questions Rich asked when we were interviewing with Valley Ranch was what is expected of my wife. He made sure, that I was not going to be looked to as a side employee. I had nothing expected of me other than to be Rich's wife and I chose to be active in different areas of the church.

I am incredibly grateful for our church family and how they look out for me. I am asked all kinds of questions, but I thought two would be plenty for my long answers. I found a blog that hits the challenges right on. Our family and friends have been so supportive through our move, and new life here. I am also so grateful for my sister who is a youth minster wife in Austin. She has taught me so much about protecting time, relationships, and family.

Megan and the terrible, horrible, no good, very bad day


"I went to sleep with gum in my mouth and now there's gum in my hair and when I got out of bed this morning I tripped on the skateboard and by mistake I dropped my sweater in the sink while the water was running and I could tell it was going to be a terrible, horrible, no good, very bad day."

Little did I know when I woke up on Sunday morning it would be a day much like this beloved children's book. It began Saturday when I was leaving a work conference. I was stuck in the worst traffic I have ever been in. It took over 2 hours for me to move 4.5 miles. A 45 minute drive took me 3 hours! So naturally after being awake since 5 am I went to bed early and woke up to a great morning.

It was a regular Sunday. All except that Rich was out of town at a retreat. Things tend to happen to me when he leaves. I have locked my self out of the house, car has died, you get the point. Well Joy was in town from Honduras and I was going to pick her up in Dallas so she could stay with me and I could take her to the airport at 4 am the next day!

So I started doing house stuff, laundry, cleaning, etc. This is when the toilet in our bathroom decided to overflow! Gross!! I cleaned everything up, called Rich and told him we needed to get a plumber asap. No big deal. Then I leave to go get Joy and my car wont start! Awesome. I call Rich and he left a extra key to his car in the house. So all I had to do was get to the church and take his car. I finally got my car to start (if you know me well you know my car is basically a lemon so this is more frustrating b/c we thought it was fixed) and headed to the church. I get in Rich's car and his engine light is on! I think I handled it well. I laughed. Maybe because I would go crazy otherwise.

I got to Dallas and enjoyed a great afternoon then dinner at Cheesecake Factory with Joy and Natalie. Cheesecake Factory always gives you too much food so naturally I brought the leftovers home for Rich. He got back from the retreat at 5. Well he was reheating the pizza box and asked me if I lit a candle because something was burning. I said no, opened the oven and the pizza box was on fire! He remained calm and I just said this is insane! We were able to safely put the fire out and no damage was done. Sheesh. What a day!

Difference in Taste

I am finally getting everything back in order! I have some before pictures of the house. I do not have the after pictures :). They will be coming soon...I hope. The house is looking great. The paint inside is not my favorite. It is well done, and looks good, but there is a slight difference in taste. We are working hard and I am trying to stay off of Pintrest as much as possible. I figured out how easily it frustrates me when I am trying to do a project. I want to see the end result and pintrest doesn't always share how difficult the in between can be. Amanda, Kayleigh, and Veronica have been helping me shop Home Goods, Target, etc. It will take awhile, but I will get there. Enjoy the before pictures!

  • Convince Rich to let me paint the fireplace
  • Organize linen closet to look like one on pintrest
  • Paint every room but the dining room and office
  • Find new bedding for master bedroom

  • Come up with a fun idea for the laundry room

Happy Birthday Sister

Today is one of my best friends birthdays. She is my sister. We didn't always see eye to eye. But as the years passed and we discovered how awesome the other really was (insert eye roll) we became very close. She is a wonderful mom, friend, wife, daughter, speech language pathologist, etc. I am thankful for her in every way. Happy birthday sis.

Homeowners

It is official Rich and I own our home! It is such an exciting time for us. Tegan was able to come back with us after staying with my parents since May! I love having her home. We are still in the process of unpacking and settling in. That is why this post will not have pictures...I cannot find my camera cord.

Our friends and family have been so sweet to come help, send thoughtful messages, cook us meals, and clean! I wish I could list everyone by name that has come over to help, but so many have I am afraid I would forget to name someone. So to all.. thank you!! It is nice to have a place that is ours. It is definitely a new feeling when you have to decide what colors to paint because you have the freedom. Our landlords in Waco would not let us paint. Lame! Anyway, we are holding off on painting a few more weeks, and going to finish unpacking. I was hoping to do it the other way around, but once I started unpacking I couldn't stop.

I have been spending loads of time on blogs and pinterest and am excited to post pictures once things are on there way to complete! Now where is my camera cord???

Moving

We are still here! We closed on our first home last Wednesday and have been busy unpacking. We have had a incredible amount of support and love during this time. Pictures will follow, but for now we work, unpack, take a water break, repeat!

We are closing on our house in less than 2 weeks and I have been pinning my life away! My newest obsession is laundry rooms. We will have a cute little laundry room and I love planning what I will do to it. I want it to be calming and bright. I am thinking painting it and adding shelves. Summertime

I love summer. I love that it gets dark later, I love ice-cream and sno-cones, I love walks and smelling fresh cut grass, I love outdoor activities, I love everything about it! It had been too long since Rich and I had a nice little getaway, so to Austin we went! The Hance's and the Roush's headed out for a weekend adventure.

After dinner we went to Amy's Ice Cream and enjoyed the beautiful night! We woke up a great night's rest we woke up ready for a day at Zilker Park. We headed to rent a kayak! This was my first time on a kayak and I loved it! I like how much faster it goes than a canoe. We had a friendly race with Amanda and Joey...it was a long, long race, and they beat us! We will get them next time! Next stop... Barton Springs!

Barton Springs Pool is cold cold! It was very refreshing, but only in short increments. So much fun watching people, and wishing we had our dogs with us! After day outside, we met my sister, brother in law, our niece, and Rich's sister for dinner. It was a wonderful trip and just what we needed!
